The Evening Land 2016 Seven Springs Chardonnay is emblematic of an exceptionally balanced vintage. With a nose of stone fruit, this wine unfurls gracefully, interweaving its svelte texture with zestful acidity and a saline detail.
The Evening Land Estate Chardonnay comes from a unique section in the south block of Seven Springs, a special vineyard in the Eola-Amity Hills AVA, established in 1984 under the direction of Burgundian legend Dominique Lafon. The wine underwent whole cluster pressing before being racked to once-used French barriques and Stockinger puncheons (500L) for fermentation. The wine remained in barrel for 12 months when it was racked to tank. The wine completed élevage in tank for another 6 months before bottling. The Seven Springs Chardonnay was cold stabilized and lightly fined with bentonite clay before bottling.

"Graceful and elegantly complex, with alluring Meyer lemon and green apple flavors accented by wet stone and sweet anise notes on a lingering finish. Drink now through 2021." – Wine Spectator, 93pts.
"The Seven Springs Vineyard Chardonnay is another sensational showing from Evening Land in this vintage. The wine itself begins with lovely aromas of lemon, green apple, Asian pear and fresh minerals with hints of honey and white flowers all developing in the glass. On the palate delicious flavors of orchard fruits, citrus connect with wonderful minerality, which persists through the gorgeous finish. This is absolutely delightful today, and should continue to drink beautifully with some additional bottle age." – International Wine Report, 92pts.
"The 2016 Chardonnay Seven Springs Vineyard opens with fleshy yellow pear and red apple skin with faint honey and toast notes and acacia flowers. Light to medium-bodied with a slight creaminess, it opens nicely in the mouth with ripe apples and touches of stone fruits, with great juicy acidity, finishing long with lots of mineral and honey notes." – Robert Parker's Wine Advocate, 90pts.
